Job Requirements

  • Associate degree or culinary arts certification preferred
  • 1-3 years experience as a chef or sous chef required
  • 7 years experience as a cook required
  • Supervisory experience preferred
  • Ability to work under pressure and meet deadlines
  • Strong leadership and team management skills
  • Ability to train and coach employees
  • Excellent communication skills
  • Must complete company required training including ServSafe
  • Compliance with company policies and procedures
  • Ability to stand, bend, lift over 25 pounds for shifts of 10+ hours
  • Willingness to work rotating schedules exceeding 55 hours per week
  • Availability for up to 25 percent travel

Job Qualifications

  • Associates degree in Culinary Arts or Culinary Arts certification preferred
  • Minimum 1-3 years of experience as a Chef or Sous Chef required
  • Minimum 7 years of experience as a cook required
  • Previous supervisory experience in high volume, manufacturing, food production, restaurant, or catering environment preferred
  • In-flight catering or high-volume food service experience preferred
  • Ability to cook meals according to detailed specifications
  • Experience working in fast-paced, deadline-driven environment
  • Strong leadership skills with ability to manage a team of cooks
  • Able to train others effectively
  • Excellent time management, organizational, analytical, communication, and leadership skills
  • Innovative mindset with ability to implement operational improvements
  • Basic computer skills and proficiency in Microsoft Office products preferred
  • ServSafe certification preferred
  • Excellent written and oral communication skills
  • Bilingual in Spanish is a plus
  • Experience with labor relations is a plus

Job Duties

  • Ensure food specifications and labor objectives meet company and customer requirements
  • Supervise department for quality and quantity ensuring items are produced and coded correctly as per FDA, USDA, HAACP and other regulations
  • Keep attendance records, prepare paperwork, set up shifts and assign employees to specific sections
  • Order raw materials from storeroom and produce extra meals as needed
  • Prepare daily production sheet and assign tasks based on passenger counts
  • Train employees on proper food preparation procedures and maintain safety and cleanliness standards during shifts
  • Manage daily production of hot and/or cold kitchens to ensure quality and consistency
  • Ensure compliance with company wage and hour policies including rest and meal breaks
  • Train and monitor employees to maximize productivity while minimizing labor and food expenses
  • Monitor daily manpower planning and employee scheduling
  • Address employee retention and reduce turnover
  • Provide coaching, counseling, and corrective actions in accordance with union agreements
  • Verify employees are assigned to correct cost centers and job titles
  • Ensure accuracy of pay rates for union represented employees
  • Complete company required training such as ServSafe
  • Adhere to all company policies and procedures
