Job Requirements

  • Associate degree in culinary arts or culinary arts certification preferred
  • 1-3 years experience as a chef or sous chef
  • 7 years experience as a cook
  • supervisory experience preferred
  • ability to cook to detailed specifications
  • ability to work under pressure in fast-paced settings
  • strong leadership and team management skills
  • capability to train and provide feedback
  • excellent time management skills
  • strong organizational and communication abilities
  • ServSafe certification preferred
  • compliance with company policies and training
  • ability to lift over 25 pounds
  • willingness to work rotating shifts over 55 hours per week
  • ability to stand, bend, and move intermittently during long shifts

Job Qualifications

  • Associate degree in culinary arts or culinary arts certification preferred
  • minimum 1-3 years experience as a chef or sous chef
  • minimum 7 years experience as a cook
  • previous supervisory experience in high-volume food production, restaurant, or catering preferred
  • in-flight catering or high-volume food service experience preferred
  • ability to cook meals according to detailed specifications
  • ability to work in a fast-paced, deadline-driven environment
  • strong leadership skills and ability to manage a team effectively
  • labor relations experience is a plus
  • ability to train others
  • ability to give constructive feedback daily
  • excellent time management and multitasking skills
  • strong organizational, analytical, communication, and leadership skills
  • innovative mindset
  • experience with menu design is a plus
  • basic computer skills and knowledge of Microsoft Office preferred
  • ServSafe certification preferred
  • excellent written and oral communication skills
  • bilingual in Spanish is a plus

Job Duties

  • Ensure food specifications and labor objectives meet company and customer requirements
  • supervise department for quality and quantity
  • ensure items are produced and dated according to specification and coding system adherence including FDA, USDA, HACCP compliance
  • keep account of attendance, set up paperwork and shifts, assign employees to specified sections
  • order raw materials from storeroom and produce extra meals as needed
  • prepare daily production sheet and assign tasks based on passenger counts
  • train and recurrently train employees on proper preparation procedures
  • ensure safety and cleanliness throughout shifts
  • manage daily production for quality and consistency in hot and cold kitchens
  • ensure compliance with wage and hour policies including rest and meal breaks
  • train and monitor employees for maximum productivity with minimum labor and food expenses
  • monitor manpower planning and schedule employees
  • oversee employee retention and reduce turnover
  • coach, counsel, and prepare corrective actions in compliance with union agreements
  • review employee cost centers, job titles, and pay rates
  • complete company-required training including ServSafe
  • comply with all company policies and procedures
