Job Requirements

  • Post-secondary education preferred
  • Minimum five years relevant experience in kitchen or culinary management
  • Familiarity with hotel food and beverage operations
  • Proficiency in managing kitchen staff and operations
  • Strong leadership and interpersonal skills
  • Ability to maintain compliance with safety and sanitation regulations
  • Effective communication skills
  • Availability to work regular shifts
  • Ability to manage budgets and control costs

Job Qualifications

  • Two plus years of post-high school education, culinary education is desirable
  • Five plus years of employment in a related position
  • Hotel experience preferred
  • Advanced knowledge of food profession principles and practices including management of associates and food and beverage operations
  • Knowledge of hotel operations such as marketing, security, safety, personnel relations, budgeting, quality assurance, hospitality law and long-range planning
  • Leadership skills to motivate and develop staff
  • Ability to work effectively under time constraints and deadlines
  • Effective verbal and written communication skills
  • Ability to adapt communication style to different audiences

Job Duties

  • Manage the daily production, preparation, and presentation of all food for the hotel's restaurant(s) and room service to ensure a consistent quality product
  • Manage human resources in the kitchen production and preparation areas including hiring, training, scheduling, performance reviews, and discipline
  • Schedule and oversee maintenance and sanitation of kitchen, equipment, and related areas to maintain a safe, healthy work environment
  • Monitor, analyze and control labor and food costs and prepare reports and schedules to meet budget goals
  • Promote accident prevention program to minimize liabilities
  • Assist the Executive Chef with creation, costing and implementation of seasonal and special menus
  • Assume responsibilities of the Executive Chef in their absence
