Job Requirements

  • High school diploma or equivalent
  • minimum five years of relevant culinary or kitchen management experience
  • strong leadership and organizational skills
  • knowledge of food safety and sanitation regulations
  • ability to manage budgets and control costs
  • effective communication skills
  • availability to work flexible hours including weekends and holidays

Job Qualifications

  • Two plus years of post-high school education culinary education desirable
  • five plus years of experience in a related position
  • hotel experience preferred
  • advanced knowledge of food profession principles and practices including management of associates complex problem solving and food and beverage management
  • knowledge of hotel operations including marketing plans security and safety programs personnel labor relations business plans repairs maintenance budget forecasting quality assurance hospitality law and long-range planning
  • leadership skills to motivate and develop staff and ensure goal accomplishment
  • ability to work under time constraints and deadlines
  • effective verbal and written communication skills with ability to adapt communication style to various audiences

Job Duties

  • Manage daily production preparation and presentation of food for hotel restaurants and room service
  • manage human resources including interviewing hiring scheduling training developing motivating coaching counseling and conducting performance and salary reviews
  • schedule and oversee maintenance and sanitation of kitchen equipment and work areas ensuring compliance with safety and health regulations
  • monitor analyze and control labor and food costs prepare reports charts and schedules to meet or exceed budgets
  • promote accident prevention to minimize liabilities and expenses
  • assist Executive Chef with creation costing and implementation of seasonal and special menus
  • assume Executive Chef responsibilities in their absence
  • comply with attendance rules and perform other assigned job-related duties
