Job Requirements
- High school diploma or equivalent
- culinary education preferred
- five plus years of related culinary experience
- prior hotel experience preferred
- advanced knowledge of food production and management principles
- leadership experience in a culinary setting
- ability to work in a fast-paced, team environment
- strong organizational and time-management skills
- knowledge of safety and sanitation standards
- effective communication skills
- flexibility to work varied shifts including weekends and holidays
Job Qualifications
- Two plus years of post-high school education, culinary education is desirable
- five plus years of employment in a related position
- hotel experience preferred
- advanced knowledge of principles and practices within the food profession including management of associates and food and beverage operations
- knowledge of hotel operations, marketing, security and safety programs, personnel relations, business planning, and budget forecasting
- leadership skills to motivate and develop staff
- ability to work effectively under time constraints and deadlines
- effective verbal and written communication skills, adaptable communication style
Job Duties
- Manage the daily food production, food preparation, and presentation of all food for banquets, restaurant, marketplace and in-room dining
- serve as a leader in the food production and preparation areas to attract, retain and motivate associates while ensuring a safe work environment
- schedule and manage maintenance and sanitation of the kitchen and equipment to meet federal, state, and franchise standards
- assist in planning food requirements and placing orders through approved providers
- oversee banquets and cafeteria operations and support restaurant operations as needed
- monitor, analyze and control labor and food costs, prepare reports and schedules to meet budget goals
- promote accident prevention programs to minimize liabilities
- assist Executive Chef in menu creation, costing and implementation
- develop weekly employee cafeteria menus and internal monthly celebrations
- assume Executive Chef responsibilities in their absence
- lead by example with attendance and coaching
- perform other job-related duties as assigned
