Job Requirements

  • High school diploma or equivalent
  • Previous experience in a kitchen leadership position
  • Ability to work flexible hours including nights, weekends, and holidays
  • Physical stamina to handle kitchen workload
  • Strong organizational skills

  • Excellent teamwork and collaboration skills

  • Experience as a sous chef or in a similar culinary leadership role

  • Proficient in menu planning and food cost management

  • Familiarity with restaurant payroll and budgeting processes

Job Duties

  • Adheres to standards of professional appearance, personal cleanliness, and proper uniform
  • Maintains, supports and promotes CMR culture and philosophies
  • Understands and protects the financial assets of the company at all times
  • Controls cost and maximizes revenue
  • Communicates in a timely and professional manner with the five major groups CMR does business with
  • Understands and complies with all policies, procedures, and laws related to employment, food handling, sanitation, and alcohol service
  • Establishes quality standards for menu items and food production
  • Assists in controlling all costs pertaining to the kitchen
  • Maintains sanitation of restaurant to exceed Health Department standards
  • Maintains proper security of all restaurant personnel and guest property
  • Supervises all Heart of House associates including interviewing, hiring, training, planning, appraising performance, rewarding, disciplining, and resolving complaints
