Job Requirements

  • Ability to work long hours
  • ability to stand for long periods without sitting or leaning
  • ability to handle multitasking heavy work exerting up to 50 pounds of force occasionally and up to 30 pounds frequently or constantly
  • ability to work in variable temperatures
  • must be able to comply with all state gaming regulations, including obtaining a license and Alcohol Beverage Control card
  • must have five to seven years experience in restaurant management and supervision
  • must have a four-year degree in related fields or equivalent experience

Job Qualifications

  • Five to seven years experience in restaurant management and supervision

  • ability to analyze and interpret restaurant operational results
  • knowledge of sanitation laws, health regulations and OSHA
  • ability to comply with state gaming regulations including obtaining necessary licenses and health certificates

Job Duties

  • Develops and manages the food cost according to the budget
  • imlements programs and processes to reduce and control lost time injuries
  • manages and schedules staffing levels to maintain budgeted level of employment and coverage
  • develops staff including training, interviewing, conducting disciplinary counseling and performance evaluations
  • cooks, carves meat, portions control, prepares new dishes, sauces and garnish
  • reviews all kitchen activities, processes and promotional ideas with Executive Chef
  • monitors and adjusts performance relative to local competition
  • meets with departmental directors and managers as necessary
  • performs other duties as assigned
