Job Requirements
- Possess and demonstrate excellent culinary skills
- Ability and willingness to work all back-of-house positions when necessary
- Basic computer knowledge
- Advanced knowledge of food professional principles and practices
- Experience with back-of-house systems, ordering, and inventory management
- Experience in a similar position
- Experience developing staff
- Management experience preferred
- Successful completion of Food Safety training required within 30 days of hire

Job Duties
- Lead kitchen team in chef's absence and provide guidance to junior staff members
- Maintain proper staffing levels to meet budgeted labor costs
- Supervise and communicate with kitchen staff and management to achieve budgeted costs related to labor, food, and beverage
- Recruit, interview, and recommend new hires for culinary operations
- Execute new hire training for kitchen staff
- Administer disciplinary actions when necessary and provide performance improvement guidance
- Adhere to sanitation and safety regulations
- Develop and maintain accurate recipe files
- Assist with meal design preparation and planning
- Ensure timely kitchen operations
- Resolve customer problems and concerns
- Manage inventory and conduct ongoing inventory analysis
- Maintain accurate and timely costing of daily specials and menu items
- Manage par levels for chemicals, BOH supplies, and small wares
- Support maintenance scheduling and preventative maintenance of restaurant equipment
- Track and control waste
- Manage unit cleanliness effectively and thoroughly
