Job Requirements

  • Possess and demonstrate excellent culinary skills
  • Ability and willingness to work all back-of-house positions when necessary
  • Basic computer knowledge
  • Advanced knowledge of food professional principles and practices
  • Experience with back-of-house systems, ordering, and inventory management
  • Experience in a similar position
  • Experience developing staff
  • Management experience preferred
  • Successful completion of Food Safety training required within 30 days of hire

Job Duties

  • Lead kitchen team in chef's absence and provide guidance to junior staff members
  • Maintain proper staffing levels to meet budgeted labor costs
  • Supervise and communicate with kitchen staff and management to achieve budgeted costs related to labor, food, and beverage
  • Recruit, interview, and recommend new hires for culinary operations
  • Execute new hire training for kitchen staff
  • Administer disciplinary actions when necessary and provide performance improvement guidance
  • Adhere to sanitation and safety regulations
  • Develop and maintain accurate recipe files
  • Assist with meal design preparation and planning
  • Ensure timely kitchen operations
  • Resolve customer problems and concerns
  • Manage inventory and conduct ongoing inventory analysis
  • Maintain accurate and timely costing of daily specials and menu items
  • Manage par levels for chemicals, BOH supplies, and small wares
  • Support maintenance scheduling and preventative maintenance of restaurant equipment
  • Track and control waste
  • Manage unit cleanliness effectively and thoroughly
