Job Requirements
- U.S. citizenship or permanent residency
- High school education or GED
- Minimum two years of Sous Chef or food service management experience
- Current ServSafe Food Handler certificate obtained prior to deployment
- Valid driver’s license
- Valid U.S. passport
- Ability to stand for up to 12 hours
- Ability to lift up to 50 pounds in a safe manner
- Capacity for extended periods away from home
- Ability to work in fast-paced and dynamic environments
Job Qualifications
- High school education or GED
- Graduate of culinary arts or apprenticeship program preferred
- Three years additional supervisory experience in high volume food service accepted in lieu of degree
- Minimum of two years Sous Chef or food service management experience
- Experience with Food Services in Antarctica accepted in lieu of minimum experience
- Current ServSafe Food Handler certificate
- Valid driver’s license
- Valid U.S. passport
- Strong leadership and communication skills
- Ability to motivate others in challenging environments
- Ability to develop a cohesive team from diverse population
- Knowledge of food safety and sanitation procedures
- Ability to follow and develop standardized recipes
Job Duties
- Supervise, train and work with Production Cooks to produce high quality, large volume meals
- Maintain clean and sanitary work areas, equipment and tools in a professional manner
- Assist Food Service Supervisor and others as necessary
- Responsible for preparation of all items on a 35-day menu cycle including holiday and special occasion foods
- Communicate and coordinate with other Sous Chefs and Food Service Coordinator daily for utilization of leftovers and production information
- Taste, adjust flavor and presentation of foods
- Educate staff on and monitor proper cooking techniques and holding temperatures of food
- Conduct daily production meetings with Production Cook to assign tasks
- Coordinate, monitor and expedite batch cooking methods before and during services
- Produce baked items as scheduled
- Support deli operations and flight meals
- Educate on and monitor proper baking techniques and oven temperatures
- Oversee preparation of alternate menu items if necessary
- Follow standardized recipes and develop new high-volume recipes
- Adhere to Standard Operating Procedures and task responsibilities
- Display leadership, communication and organizational skills
- Develop a cohesive team from diverse population
- Maintain flexibility and positive attitude
- Coordinate proper thawing procedures with Food Service Coordinator
- Ensure safety and sanitation in the kitchen including equipment usage and cleaning
- Properly label and date food
- Place weekly food and specialty bread orders
- Record quantities of food prepared, served and discarded
- Honor requests for late arrivals with plated food or open service line
- Coordinate with Stewards for timely transfer of dirty pots
- Support Operations Division metrics and train employees accordingly
- Comply with ASC Environmental Health, Safety and Quality Assurance requirements
- Implement and maintain a safe workplace program
- Able to stand up to 12 hours and lift weights according to safety regulations
