Job Requirements

  • High school education or GED
  • Graduate of a culinary arts or apprenticeship program or three years additional supervisory experience in high volume food service accepted in lieu of degree
  • Minimum of two years Sous Chef or food service management experience
  • Current ServSafe Food Handler certification prior to deployment
  • Valid driver's license
  • Valid U.S. passport
  • U.S. citizenship or permanent residency
  • Ability to stand up to 12 hours
  • Ability to lift safely up to 50 pounds
  • Capacity for long duration deployment in extreme environment

Job Duties

  • Supervise, train and work with Production Cooks to produce high quality, large volume meals including breakfast, lunch, and dinner, desserts, breads, and pastries
  • Maintain clean and sanitary work areas, equipment and tools in a professional manner
  • Assist Food Service Supervisor and others as necessary
  • Prepare all items on a 35-day menu cycle including holiday menu items and special occasions
  • Communicate and coordinate with other Sous Chefs and Food Service Coordinator for utilization of leftovers, production information and fresh produce management
  • Taste, adjust flavors and present food dishes
  • Educate staff on proper cooking techniques and holding temperatures
  • Conduct daily production meetings with Production Cook to provide menu overview and assign tasks
  • Coordinate, monitor and expedite batch cooking methods before and during services
  • Produce baked items as scheduled
  • Support deli operations, flight meals, and provide baked goods for specialty functions
  • Anticipate and prepare alternate menu items if consumption exceeds main item production
  • Adhere to standardized recipes and develop high-volume recipes as needed
  • Ensure all aspects of safety and sanitation in the kitchen including equipment usage and timely cleaning
  • Place weekly food and specialty bread orders timely
  • Record and manage quantities of food prepared, served and discarded
  • Honor requests for late arrivals with plated food or open service line
  • Coordinate transfer of dirty pots with Stewards
  • Train and orient employees on performance and documentation related to Operations Division metrics
  • Comply with environmental health, safety and quality assurance requirements
  • Implement and maintain a safe workplace program
  • Perform other duties as required
