Job Requirements
- Culinary degree or related training equivalent in the hospitality or restaurant industry
- Minimum 2 years of relevant work experience in a similar scope and title
- Experience within luxury brand or markets preferred
- Food safety manager certification preferred or to be attained within 30 days
- Ability to work safely in a kitchen environment with high temperatures and humidity
- Capable of managing food and labor costs within budgeted guidelines
- Ability to work varying schedules potentially exceeding 40 hours per week
- Comfortable working in a shared, noisy space without a private office
- Ability to lift up to 50lbs and move 10lbs regularly
- Flexibility to travel by foot, car, bus, airplane, and endure long periods of standing and sitting
Job Qualifications
- Culinary degree or related training equivalent in Hospitality or Restaurant Industry
- Minimum of 2 years relevant work experience in a similar scope and title
- Experience within luxury brand markets preferred
- Food Safety Manager Certification preferred or to be attained within 30 days
- Proven strategic business leadership skills
- Advanced written, verbal, and interpersonal communication skills
- Ability to implement and uphold service standards
- Ability to prioritize and organize work assignments
- Ability to work well in high-pressure situations
- Knowledge of financial information and basic arithmetic
- Ability to motivate associates and build a cohesive team
- Ability to prepare a wide range of culinary offerings
Job Duties
- Maintain a file of recipes including ingredients, portions, and directions for dish preparation and presentation
- Assist the Executive Chef in developing menus, recipe cards, and specifications according to Kessler SOPs
- Set standards and methods for portion control with perceived value factors in mind
- Ensure all recipes are followed exactly and consistently
- Assume responsibility for kitchen in absence of Executive Chef
- Monitor inventory daily to ensure proper levels and quality
- Manage food and labor costs within budgeted guidelines
- Arrange training of staff on proper use and cleaning of equipment and supplies
- Assist with organizing kitchen meetings at least once a month
- Participate in Grand Performer performance appraisals and progressive discipline
- Assist Executive Chef with developing and coaching staff
- Participate and attend manager and mandatory meetings
- Maintain kitchen cleanliness and organization standards
- Complete daily walkthroughs of kitchen area
- Assist Executive Chef in tracking food costs and completing monthly inventory
