Job Requirements
- Culinary arts degree desired
- Proficiency in Serve Safe, sanitation and HACCP
- Previous leadership experience preferred
Job Qualifications
- Five years of experience in culinary arts in an upscale restaurant, hotel, resort or club environment
- Ability to speak, hear, understand, read and write English
- Strong customer service aptitude
- Good verbal and written communication skills
- Ability to implement and uphold service standards
- Ability to prioritize and organize work assignments
- Ability to interact with all associates and guests of the resort
- Ability to work well in stressful, high-pressure situations
- Ability to exert up to 75 pounds of force occasionally and constantly lift, carry, pull or push up to 30 pounds of force
- Ability to stand or walk for long periods of time
Job Duties
- Assist in creating and implementing menus
- Creating the description for all written menus
- Contribution to research and development
- Daily special creation according to concepts
- Assist to create menus for various purposes
- Ordering of par levels according to the mise en place and menu description
- Rotate all mise en place daily to ensure 100% freshness
- Maintain all menu standards
- Coordinate and create opening and closing procedures
- Develop job descriptions and standard operating procedures to ensure quality and efficiency
- Execute all mise en place functions including set up, scheduling, ordering and receiving
- Communicate effectively with management, peers, line, and front of house employees
- Conduct and attend meetings including daily communication, service, culinary line up, chef’s meetings, weekly staff meetings and monthly department meetings
- Maintain sanitation and HACCP documentation in accordance with California and LA County health codes
- Ensure superior cleanliness throughout all food and beverage departments
- Guide and support the team to exceed guest satisfaction goals
- Schedule weekly according to forecast
- Manage food, labor and operational costs effectively
- Relieve cooks and chefs for various shifts
- Listen effectively before acting
- Communicate both popular and unpopular content effectively
- Use the associate’s handbook and CoralTree philosophy as coaching tools
- Create professional working relationships among all associates
- Motivate associates and maintain a cohesive team
- Ensure accurate maintenance of menu and recipe database
- Perform related duties as required
- Support the team and foster a learning environment
