Job Requirements

  • High school diploma or equivalent
  • Minimum 2 years of culinary experience in a fast-paced environment
  • Prior experience in a supervisory or leadership role preferred
  • Knowledge of food safety and sanitation regulations
  • Ability to stand for extended periods and handle kitchen equipment
  • Strong organizational skills and attention to detail
  • Effective communication skills
  • Ability to work flexible hours including weekends and holidays
  • Must be able to train and mentor team members
  • Proficiency in inventory control and kitchen operations

Job Duties

  • Train and validate all culinary team members through the use of Sterling's kitchen training materials
  • Maintain a fun and professional work environment grounded in our values, guiding principles and promises
  • Be a part of new team member onboarding and orientation to the Sterling Way
  • Ensure an ongoing system to assure food quality and standards per team member
  • Maintain a standardized training program for all positions and ensure prep and service recipes are current and available
  • Provide Chef de Cuisine regular feedback on team member's performance
  • Cross-train culinary team members on all aspects of the line
  • Support Chef de Cuisine and management team in all cafe priorities
  • Ensure 100% adherence to all menu implementations and procedural changes
  • Lead by example with high standards every shift and every day
  • Help the Chef de Cuisine run a great features program daily within Sterling Food Philosophy guidelines
  • Maintain a guest friendly environment at all times
  • Perform dress for success procedures before and after each shift
  • Adhere to and communicate cook times regularly
  • Run continuing cafe education on food specs and standards for both front and back of house through pre-shift meetings
  • Assist with weekly inventories
  • Assist Chef de Cuisine with review of pricing from vendors and ensure accuracy
  • Ensure all orders are checked in to standard and establish par levels while executing for guests in the Sterling Way
  • Aid in the improvement of year over year performance at the cafe
  • Act as point person for BOH maintenance and maintain an equipment repair log
  • Keep kitchen cleaned and well maintained
  • Ensure walk-in is cleaned and organized daily
  • Visually inspect food deliveries and use only the freshest ingredients for all menu items
  • Monitor proper receiving, storage, and rotation of food products to comply with health regulations
  • Properly rotate food products to minimize spoilage and waste
  • Maintain industry-leading safety and sanitation standards
  • Ensure compliance with local and federal health codes, achieving a health inspection rating of A
  • Complete daily line checks
  • Adhere strictly to service standards and fix any issues promptly
  • Ensure all proper utensils are used daily
  • Continue education on food specs and standards through pre-shift meetings
  • Assist with purchasing products to spec from approved vendors
  • Educate and develop team on proper sanitation issues
  • Work closely with Chef de Cuisine and Health department on sanitation
  • Teach and train management and hourly team members about kitchen safety
  • Assist in training MITs about kitchen operations
  • Execute daily and monthly equipment cleaning schedules
  • Complete weekly R&M walkthroughs with GM as directed
