Job Requirements

  • High school diploma or GED equivalent
  • Professional diploma or food services management
  • 1-2 years of hands-on butcher experience
  • Advanced and accurate knife handling skills
  • Minimum 2+ years of cooking experience with advanced knowledge of food trends, quality, production, sanitation, presentation, and food cost control
  • Working knowledge of fire extinguishers
  • Effective communication and interpersonal skills
  • Excellent organizational skills and ability to multitask
  • SafeServ Certification compliant
  • Ability to stand for long periods of time in a busy kitchen environment
  • Ability to lift up to 50 pounds occasionally and 35 pounds regularly
  • Exposure to heat, fire sparks, and noise in the kitchen
  • Adherence to personal appearance standards

Job Qualifications

Job Duties

  • Manage all opening and closing shift procedures depending on the shift
  • Direct staff to clean, pull out shelves, and label all proteins
  • Ensure correct storage and labeling of food items
  • Maintain cleanliness and organization of the meat station, refrigeration compartments, and oven
  • Track and report any food or fuel waste
  • Promptly report any equipment or maintenance issues
  • Train with Chef de Cuisine on all aspects of the kitchen's operations within 3 months of hire
  • Able to assume all duties while Chef is absent
  • Collaborate with Chef to train and develop staff through orientations and ongoing feedback
  • Foster a positive and respectful work environment
  • Aid in the training of new employees on restaurant procedures and expectations
  • Ensure health and safety regulations are strictly observed
  • Adhere to and adapt to changes in company policies, communicating changes to the team
  • Exercise good judgment in decision-making and report issues to Chef and General Manager
  • Maintain refrigeration temperature control
  • Promote a safe and clean work environment by following sanitation and organizational practices
  • Ensure guest service and employee satisfaction meet company standards
  • Partner with the front of house staff for customer satisfaction
  • Accommodate customers with food allergies or intolerances
  • Follow proper plate presentation and garnish setup for all dishes
  • Assume 100% responsibility for the quality of the products served
  • Prepare all food items as directed in a sanitary and timely manner
  • Check the quality of raw food products to ensure health and safety standards are met
  • Follow recipes, portion control specifications, and presentation standards accurately
  • Maintain awareness of dishes for customers with food allergies or intolerances
