Job Requirements
- High school diploma or equivalent
- Minimum 3 years related supervisory or management experience
- Proven expertise in culinary arts and food preparation
- Knowledge of food cost control and purchasing
- Ability to work varied shifts including weekends and holidays
- Physical ability to stand, walk, squat, reach, lift up to 30 pounds
- Strong communication and interpersonal skills
- Willingness to travel locally occasionally
- Food safety certification or willingness to obtain within 30 days
Job Qualifications
- At least 3 years of supervisory or management experience in a high volume, high energy food and beverage environment
- Exceptional knowledge in food preparation
- Working knowledge of food cost, purchasing and kitchen equipment operation
- Proficient computer skills
- Strong knowledge of state and federal laws and regulations related to food, safety, sanitation and employment
- Ability to communicate professionally and work effectively in restaurant and office environments
- Food safety certification preferred or ability to obtain within 30 days of hire
Job Duties
- Provide leadership and oversight to culinary department to ensure economical and timely food production
- Review and ensure appropriate staffing levels according to payroll, budget, reservations, guest flow, and needs
- Cook, prepare and direct food preparation to ensure compliance with approved recipes and procedures
- Maintain culinary presence on dining floor and establish guest relationships
- Conduct daily, weekly and monthly inventories for controls and financial reports
- Perform maintenance and ensure safety standards and guidelines are followed for equipment and facility assets
- Supervise culinary, dishwashing and kitchen personnel, coordinating assignments for timely food production and staff performance
- Review financial transactions and monitor budget for efficient operation and profitability
- Assist in purchasing, preparation and delivery of all food and non-food items
- Receive and quality check purchased items
- Plan, develop and implement menus in conjunction with Executive Chef and assist in developing recipe cards to ensure consistency and profitability
