Job Requirements

  • 3 to 5 years in professional kitchens with at least 1 year in a Sous Chef or similar leadership role
  • Culinary degree or certificate preferred
  • High school diploma required
  • Prior work experience in a restaurant or hospitality position
  • Serv Safe Food and Alcohol Certification required
  • Leadership qualities including good listening skills, ability to motivate others, respect and tolerance for others, and effective communication with guests, vendors, team members, management, and company personnel
  • Good judgment and ability to make independent decisions and solve problems
  • Excellent guest service skills
  • Ability to understand guest needs and ask questions to expedite requests
  • Proficiency in Microsoft Outlook including email management, calendar scheduling, and task organization.

Job Duties

  • Manage and direct the work of HOH team members including hiring, scheduling, assigning and directing work, training, coaching, counseling, and disciplining
  • Conduct regular meetings and ensure proper education of the HOH team
  • Perform performance reviews and resolve team member complaints
  • Decide upon termination and other disciplinary actions for team members reporting to the Executive Chef
  • Oversee inventory, variances, and ordering with respect to the HOH Department
  • Exercise discretion and independent judgment in enforcing management policies and operational practices
  • Control food costs by ensuring properly billed and received product and investigating variances
  • Control labor costs
  • Ensure adherence to company and restaurant policies including food safety, sanitation, allergy, OSHA, and team member handbook
  • Manage guest complaints and overall satisfaction promptly
  • Utilize company business systems such as POS, HRIS, hiring, scheduling, inventory, and labor management software
  • Assign, direct, review, and approve work of cooks and other HOH team members
  • Develop and mentor cooks and HOH staff to promote growth and performance
  • Determine appropriate staffing levels and manage breaks, meal periods, and shift assignments
  • Participate in interviewing and hiring cooks and HOH team members
  • Complete performance appraisals and handle discipline and performance management
  • Authorize and assign overtime when necessary
  • Ensure company recipes are adhered to and approved products are utilized
  • Perform job functions of other management personnel when necessary
  • Represent the company in complaints, disputes, and grievances when required.
