Job Requirements

  • High school education or equivalent
  • One to two years of related kitchen management experience
  • Ability to lift, push, pull and carry heavy items
  • Ability to bend knees frequently and maintain mobility
  • Ability to stand continuously for long periods
  • Able to hear and communicate effectively with staff
  • Moderate to excellent comprehension and literacy to read, write and analyze records
  • Ability to work in variable temperature environments including freezer and hot kitchen areas

Job Qualifications

  • High school education or equivalent
  • One to two years of related kitchen management experience
  • Advanced knowledge of food profession principles and practices
  • Experience managing kitchen staff and complex food and beverage operations
  • Strong communication and organizational skills
  • Ability to analyze budgets and control costs
  • Knowledge of federal, state and local food safety regulations

Job Duties

  • Manage the daily production, preparation and presentation of all food for the hotel's restaurants and room service to ensure quality and consistency
  • Manage human resources in the kitchen including interviewing, hiring, scheduling, training, developing, coaching and counseling staff
  • Schedule and maintain sanitation and safety standards for kitchen equipment and related areas
  • Monitor, analyze and control labor and food costs
  • Prepare reports, charts and schedules to meet or exceed budget goals
  • Promote the Accident Prevention Program to minimize liabilities
  • Assist the Executive Chef in creating and implementing menu and production changes
