Job Requirements
- High school diploma or equivalent
- Minimum of 3 years culinary experience with at least 1 year in a supervisory role
- Ability to work flexible hours including evenings, weekends and holidays
- Strong leadership and interpersonal skills
- Knowledge of food safety standards and OSHA regulations
- Ability to stand for extended periods and handle kitchen equipment safely
- Good organizational and multitasking capabilities
- Effective communication skills
- Must pass necessary health and background checks
Job Qualifications
- Proven experience as a sous chef or in a similar culinary leadership role
- Strong knowledge of food preparation, presentation, and kitchen operations
- Leadership and team management skills
- Ability to train, coach and develop kitchen staff
- Familiarity with health, safety, and sanitation regulations including OSHA compliance
- Budgeting and cost control experience
- Excellent communication and organizational skills
- Ability to work in a fast-paced, high-pressure environment
- Culinary degree or relevant certification preferred
- Experience working in upscale or fine dining restaurants is an advantage
- Proficiency in scheduling and inventory software is beneficial
Job Duties
- Directs and participates in food production operations
- Leads, directs, coaches and teaches all kitchen and food production team members
- Assists with recruiting, hiring, and training team members using approved company materials
- Communicates job expectations and standards, reviews job performance, coaches and holds team members accountable
- Prepares daily production list and directs food production activities for meals, banquets, and special events according to established recipes and quality standards
- Ensures line levels meet forecasted sales
- Conducts daily line checks to ensure proper hold temperatures, portion sizes, quality and freshness
- Ensures compliance with health and safety regulations including OSHA and sanitation standards
- Assists Chef in preparing annual budgets for food, equipment, supplies, and labor
- Monitors sales, food and labor costs, and adjusts to meet financial metrics
- Places food and supply orders, verifies deliveries and processes invoices
- Creates work schedules within budgeted labor costs
- Maintains kitchen equipment safety and operational standards
- Develops training and growth plans for team members
- Enhances dining experience through tableside visits and partnership with dining room managers
- Participates in restaurant and corporate leadership teams
- Works with Sales Manager to develop and execute menus for banquets and events
- Facilitates daily pre-shift meetings and maintains communication logs
- Builds a cohesive team, encourages two-way communication, and fosters an appreciation environment
- Performs related duties as assigned
