Job Requirements

  • High school diploma or GED unless waived by human resources
  • three years related food service experience including two years supervisory
  • ServSafe certification required
  • ability to pass a pre-employment drug and alcohol screen
  • ability to pass background investigation
  • ability to obtain and maintain gaming license
  • flexibility to work nights, weekends, and holidays
  • physical ability to lift up to 50 pounds and perform kitchen tasks

Job Qualifications

Job Duties

  • Ensure the proper amounts of food are prepared in accordance with production sheets
  • teach kitchen employees skills required for their positions including use and care of culinary tools
  • supervise food production, preparation and presentation to ensure quality and consistency
  • assist in menu and daily special planning and implement production changes
  • coordinate cook schedules to maintain optimum staffing
  • maintain safe, orderly and sanitized kitchen
  • ensure recipes and presentations meet restaurant specifications
  • improve staff effectiveness through coaching, counseling, training and recommending disciplinary actions
  • monitor labor and food costs to achieve financial objectives
  • ensure compliance with gaming, health and sanitation regulations
  • inform wait staff in advance of food shortages and find substitutes
  • organize efficient production flow and delegate tasks
  • maintain menu and food quality standards
  • ensure cooks prepare food in quantities according to menu and patron count
  • direct activities of workers assisting with meal preparation
  • maintain good communication and positive work environment
  • manage and monitor daily culinary production and enforce policies and procedures
  • oversee casino restaurants and food outlets
  • assist with special events and catering preparation
  • calculate food costs and maintain cost control records
  • maintain cleanliness, safety and sanitation in kitchen areas
  • prepare inventories and requisition supplies
  • mentor and coach team members
