Job Requirements
- High school diploma or equivalent
- 2-3 years of professional culinary leadership experience in hotel or full-service restaurant settings
- Knowledge of food safety and sanitation standards
- Strong organizational and communication skills
- Ability to work effectively in a fast-paced, multi-outlet kitchen environment
- Flexibility to work varied shifts including weekends and holidays
- Ability to stand for extended periods and perform physical kitchen duties
Job Qualifications
- 2-3 years of hotel outlet or full-service restaurant culinary leadership experience
- Experience working with unionized kitchen staff is preferred
- Strong knowledge of federal, state and local health and safety regulations
- Proven leadership skills with a solutions-oriented approach
- Ability to effectively train, motivate and lead culinary teams
- Familiarity with menu planning and cost control in a multi-outlet environment
- Culinary degree or equivalent professional certification is an asset
Job Duties
- Assist the Executive Chef in the direction and oversight of all culinary operations including preparation and production of all hotel meals, food quality and presentation, compliance with safety and sanitation standards and regulations, team member productivity and performance, implementation of policies and procedures, cost controls and overall profitability
- Create and implement menu selections for special banquet themes and events based on current food trends and regional tastes in partnership with the Executive Chef and Director of Food and Beverage
- Ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
- Assist in monitoring and developing team member performance, including providing supervision, conducting counseling, assisting with evaluations, training, scheduling and assigning work, and delivering recognition and reward
- Support the Executive Chef in fostering a positive kitchen culture that aligns with Hilton values
- Help maintain inventory control and order supplies to ensure efficient kitchen operations
- Ensure sanitation and cleanliness standards are maintained in the kitchen at all times
