Job Requirements
- Degree or certification from accredited culinary arts institute or apprenticeship certification from American Culinary Federation or equivalent professional chef experience
- Experience in room service, continental cuisine, high volume three meal/coffee shop, steakhouse and Italian cuisines
- Strong working knowledge of Asian, Mexican, Southern, Italian, Cajun, Continental, Seafood and East Coast cuisines
- Ability to stand on feet for up to twelve hours per day
- Capacity to withstand frequent temperature changes
- Ability to bend, stoop, reach, crouch, kneel, push and pull
- Able to lift 70 pounds above or below shoulders
- Able to push or pull weights up to 125 pounds on a cart
- Tolerance for cleaning chemicals and second hand smoke
- Flexible schedule
- Visual acuity and manual dexterity for kitchen utensils and equipment
- Professional appearance and conduct at all times
Job Qualifications
- Must be able to communicate effectively through written policy, memorandum, email and verbally
- Must be proficient in Microsoft Word and Excel
- Familiarity with AS/400 Stratton/Warren system preferred
- Proven dynamic and team-oriented leadership ability
- Guest and employee focused with completion of Superlap
- Recommended completion of Exploring Supervisor Opportunities readiness activities
- Ability to uphold and demonstrate highest integrity levels
- Expert knowledge in food storage, cooling, re-thermalization, recipe formulation, knife handling, and preparation techniques
- Skilled in weights and measures and culinary operations
Job Duties
- Responsible for interviewing, training, and selecting employees for the department
- Maintain consistency and quality for all food items under Executive Chef's direction
- Ensure menu development timelines are met
- Direct and manage leads and line level employees to achieve budgetary, food quality and customer service expectations
- Provide Lead and Line level support and coverage during staffing gaps
- Conduct Performance Reviews in accordance with policies and procedures
- Provide feedback, coaching and development guidance as needed
- Respond to and handle employee complaints in a timely and efficient manner
- Recommend or take disciplinary action as per established policies and procedures
- Plan, supervise and monitor the work of team members in assigned areas
- Assist in ensuring schedules are complete based on forecast and productivity standards
- Approve vacation and floater requests and communicate with team members
- Ensure daily sanitation checklists and temperature log reports are completed
- Conduct random health inspections and health card audits
- Instruct team members regarding safe food handling and sanitation
- Spend majority of time on the floor and conduct daily and quarterly meetings with direct reports
- Mentor, coach, and document staff performance
- Complete 90 day and annual reviews timely
- Ensure adherence to Culinary Standard Operating Procedures
- Review menus and seek Executive Chef approval
- Conduct educational seminars and workshops
- Monitor compliance with federal, state, and gaming laws
- Maintain attendance and overtime logs
- Use training and development tools
- Perform other duties as assigned
