Job Requirements
- must have culinary arts degree desired
- must have minimum 1-year culinary management experience
- must have minimum 5 years experience in culinary arts in an upscale restaurant, hotel, resort or club environment
- must be proficient in Serve Safe, sanitation and HACCP
- must have strong customer service aptitude
- must have good verbal and written communication skills
- must be able to implement and uphold service standards
- must be able to prioritize and organize work assignments
- must be able to interact with all associates and guests
- must be able to work well in stressful high-pressure situations
- must be able to exert up to 50 pounds of force occasionally
- must be able to lift, carry, pull or push up to 30 pounds constantly
- must be able to stand or walk for long periods
- must be able to speak, hear, understand, read and write English
Job Qualifications
- culinary arts degree desired
- minimum 1-year culinary management experience

Job Duties
- supervise cooks and kitchen personnel in food preparation
- participate in planning the Culinary Department activities
- assist in creating and implementing menus
- create descriptions for all written menus
- contribute to research and development
- create daily specials aligned with culinary concepts
- order supplies according to par levels and mise en place
- rotate mise en place daily to ensure freshness
- maintain menu standards
- coordinate and create opening and closing procedures
- develop job descriptions and standard operating procedures
- execute mise en place functions including setup, scheduling, ordering, and receiving
- communicate effectively with team and management
- conduct meetings including daily and weekly staff meetings
- maintain sanitation and HACCP documentation
- ensure superior cleanliness in food and beverage departments
- guide and support team to exceed guest satisfaction goals
- manage weekly scheduling according to forecast
- manage food, labor, and operational costs
- relieve cooks and chefs for various shifts
- listen and communicate effectively
- use associate handbook and CoralTree philosophy to coach employees
- foster professional relationships among associates
- motivate and maintain cohesive team
- maintain menu and recipe database
- perform related duties
- support team learning and teaching
- act as Terranea’s ambassador within the community
