Job Requirements

  • Must have a minimum of 1-year culinary management experience
  • Must have 5 years of experience in culinary arts in an upscale restaurant, hotel, resort or club environment
  • Must be able to speak, hear, understand, read, and write the English language
  • Culinary arts degree desired
  • Serve Safe, sanitation and HACCP proficiency
  • Strong customer service aptitude
  • Good verbal and written communication skills
  • Ability to implement and uphold service standards
  • Ability to prioritize and organize work assignments
  • Ability to interact with all associates and guests of the resort
  • Ability to work well in stressful, high-pressure situations
  • Must be able to exert up to 50 pounds of force occasionally and able to constantly lift, carry, pull or push up to 30 pounds of force
  • Must be able to stand or walk for long periods of time

Job Qualifications

Job Duties

  • Supervise, coordinate, and participate in activities of cooks and kitchen personnel engaged in food preparation and cooking
  • Assist in creating and implementing menus and writing menu descriptions
  • Contribute to research and development of new culinary concepts
  • Create daily specials aligned with Terranea Resort’s culinary concepts
  • Assist in creating menus for various purposes
  • Manage ordering of par levels according to mise en place and menu descriptions
  • Ensure daily rotation of all mise en place for 100 percent freshness
  • Maintain all standards as established for menus
  • Coordinate creation of opening and closing procedures
  • Develop job descriptions and standard operating procedures to promote quality and efficiency
  • Execute mise en place functions including setup, scheduling, ordering, and receiving
  • Communicate effectively with peers, management, and both back and front of house employees
  • Conduct and participate in meetings including daily communication, service, culinary lineup, chef’s, weekly staff, and monthly department meetings
  • Maintain sanitation and HACCP documentation in compliance with California and LA County health codes
  • Ensure superior cleanliness throughout food and beverage departments
  • Guide and support the team to exceed guest satisfaction goals
  • Create weekly staffing schedules according to forecasts
  • Manage all aspects of food, labor, and operational costs
  • Relieve cooks and chefs as needed during shifts
  • Utilize effective listening and communication strategies
  • Use the associate’s handbook and CoralTree philosophy to coach employees
  • Foster professional working relationships among resort associates
  • Motivate associates to maintain a cohesive team environment
  • Ensure accurate maintenance of menu and recipe databases
  • Perform related duties as required
  • Support professional development and team learning
  • Act as an ambassador for Terranea Resort within the community
