Job Requirements

  • High school diploma or GED or equivalent experience
  • ServSafe Manager Certification
  • two years cooking in a commercial kitchen
  • one year supervisory or sous chef experience
  • ability to routinely lift up to 50 lbs
  • ability to stand and walk for up to eight hours
  • ability to bend, stoop, push and pull
  • ability to work in a smoking environment
  • ability to drive catering vehicles
  • ability to maintain a good driving record

Job Duties

  • Maintains efficient operation of the kitchen by assigning duties to kitchen staff
  • communicates departmental information
  • instructs personnel on food service policies and procedures
  • corrects non-compliance
  • regulates food product utilization
  • drafts food production sheets
  • monitors kitchen staff performance
  • performs production cook duties as needed
  • prepares and cooks food according to recipes and menu standards
  • chops, slices, dices, bakes, fries, bastes, boils, sautés, steams, grills, marinates, portions desserts and condiments
  • ensures food wells are filled and replenished
  • assists in training production cooks and catering staff
  • provides guidance on portion control and food presentation
  • monitors and counsels staff
  • conducts performance appraisals
  • generates paperwork
  • maintains safe and sanitary kitchen and storage areas
  • checks food temperature and freshness
  • rotates food items
  • cleans kitchen and storage areas
  • organizes storage
  • follows utilization guidelines
  • assists with on-site and off-site catering
  • sets up and breaks down catering events
  • completes Chef duties in their absence
