Job Requirements

  • Ability to work long hours including weekends and holidays
  • able to stand for long periods
  • able to lift at least 50 pounds
  • knowledge of state health codes and Ecolab safety and health protocols
  • provide own cutting tools and calibrated food-grade thermometer
  • willingness to work nights
  • desire to exceed expectations
  • comfortable working in fast-paced, high-volume kitchens
  • ability to set pace and manage team workload

Job Qualifications

  • College graduate in culinary arts
  • 5+ years experience in a high-volume professional kitchen
  • knowledge of basic and advanced cooking methods
  • strong familiarity with allergy information
  • knowledge of correct cooking temperatures for vegetables and proteins
  • certification as an active food handler
  • proficiency in reading and understanding BEOs, menus, and production schedules
  • strong organizational skills
  • ability to work independently
  • effective communication and leadership skills
  • energetic and motivated personality

Job Duties

  • Attract, retain, and motivate the best culinary talent
  • act in the absence of the executive chef to complete daily ordering using current par levels
  • perform any kitchen function including cooking and stewarding
  • conduct daily kitchen walk-throughs and recommend corrections and improvements
  • hold daily team meetings to communicate important information
  • attend weekly food and beverage and leadership meetings to represent the culinary team
  • manage departmental finances, analyze and control costs, and manage budgets for profitable operations
