Job Requirements
- Previous kitchen management and/or sous chef experience for a minimum of 1 year in Italian restaurant
- Previous experience in fine dining restaurant
- Ability to work evening hours, weekends, and holidays
- Management work week of minimum 50-55 hours per week
- Ability to work with minimal supervision
- Must be at least 21 years of age
- Serve Safe Manager Certification or ability to obtain one within 30 days
- Be able to reach, bend, stoop and frequently lift up to 50 pounds
- Be able to work in standing position for up to 10 hours
- Ability to work in fast paced, high stress environment
- Ability to work evenings, weekends, and holidays
Job Qualifications
- Previous kitchen management and/or sous chef experience for a minimum of 1 year in Italian restaurant
- Previous experience in fine dining restaurant
- Preferred experience with homemade pasta and sauces
- Preferred bachelor's degree in business or similar field
- Serve Safe Manager Certification or ability to obtain one within 30 days
- Excellent teaching and coaching skills
- Strong statistical and business tact synthesis skills
- Ability to inspire team
- Appreciation of diversity
Job Duties
- Hire, train, retain and develop BOH team under supervision of General Manager or Chef De Cuisine
- Direct supervision of the line cooks, prep cooks, dishwashers and BOH supervisors
- Oversight of all recipes and procedures held to standards
- Ability to drive BOH operations to success
- Spot checks food requisitions for various cooking stations and ensure execution to standards
- Assures execution of staff training programs
- Check freshness and quality of ingredients and ensure compliance with sanitation regulations and safety standards
