Job Requirements

  • ability to perform skills required of a professional chef
  • ability to work in excess of a 40-hour week with irregular hours
  • ability to walk, stand, and sit for long periods including on the floor
  • exposure to communicable diseases and bodily fluids
  • ability to lift and carry up to 20 pounds
  • ability to maintain alertness for several hours while standing or sitting

Job Qualifications

  • associate's degree in culinary arts or equivalent experience
  • minimum of four years experience in institutional cooking
  • servsafe manager certification or ability to obtain within 90 days of hire
  • strong leadership and communication skills
  • knowledge of food safety and sanitation regulations
  • experience in budget management and inventory control
  • ability to manage and train diverse staff including international seasonal employees
  • excellent organizational and customer service skills

Job Duties

  • prepare and provide healthy and nutritious meals and snacks for various YMCA programs including outdoor centers, summer camps, schools out, wilderness trips, membership events, special events, banquets, and off-site facilities
  • supervise and coordinate activities of cooks, general food service staff, and kitchen or dishroom personnel
  • train and supervise full and part-time staff including seasonal international support staff intake, housing, training, and travel arrangements
  • manage risk in all food service areas including incident reporting within 24 hours
  • manage sanitation processes ensuring compliance with health and safety standards
  • develop and maintain positive public relations and customer service through effective communication
  • review and consult annual budget ensuring services are delivered within budget and revenue goals are met or exceeded
  • control expenses through portion control, inventory control, and purchasing techniques
  • prepare food service areas for yearly ACA visits and health board inspections
  • ensure compliance with ACA, state, local, YMCA, and federal government standards
  • participate and support fundraising activities and grant applications
  • execute service of nutritious, appealing meals
  • maintain cleanliness and organization of dining halls, kitchens, food service vehicles, and equipment
