Job Requirements
- High school education preferred
- Apprenticeship or post-secondary education or equivalent work experience beneficial
- Managerial and production experience in a similar hotel or resort required
- 3-5 years management of high volume hot and cold food production
- Ability to read, write and speak English
- Finger and hand dexterity to operate food machinery
- Ability to lift or move goods weighing up to 200 lbs continuously
- Knowledge of food and labor cost controls
- Basic computer knowledge
- Ability to grasp, lift and move heavy items
Job Qualifications
- High school education preferred
- Apprenticeship, post-secondary education, or equivalent work experience beneficial
- Managerial and production experience required in a similar hotel or resort
- 3-5 years of management experience in high volume production of hot and cold food, associate dining, upscale restaurants, and multiple outlet operations
- Additional language skills helpful
- Basic computer knowledge helpful
- Thorough knowledge of food products, standard recipes, and proper preparation
- Ability to read, write, and speak English proficiently
- Finger and hand dexterity to operate food machinery
- Knowledge of food and labor cost controls and their calculations
Job Duties
- Train, supervise, and work with all chefs' staff to prepare and present food according to hotel standard recipes
- Assign specific duties to all kitchen associates for efficient operation
- Select, train, and supervise kitchen staff in proper menu item preparation
- Schedule culinary staff while managing payroll costs
- Ensure proper ordering, receiving, storage, usage, and rotation of food products per Health Department regulations
- Adhere to control procedures for cost and quality
- Supervise daily safety and sanitation practices
- Maintain vacation schedules for adequate staffing
- Assist in equipment repair controls and preventative maintenance
- Develop and execute special events, VIP parties, and staff events
- Prepare all food items according to recipe specifications
- Perform other assigned duties
