Job Requirements
- High school diploma or equivalent
- Ability to speak read write and comprehend English effectively
- Minimum 5 years cooking experience
- At least 2 years management experience in luxury hotel or restaurant
- Experience in saucier prep banquet pantry and hot line stations
- Working knowledge of basic sauce groups soup preparations and cooking temperatures
- Understanding of banquet production and sanitation standards
- Knowledge of kitchen equipment safety and usage
- Physical ability to work long hours on feet and lift up to 50 pounds
- Ability to work flexible schedule including weekends holidays and split shifts
- Commitment to punctuality and professional grooming standards
- Ability to attend training courses and meetings
- Must obtain Certified Professional Food Manager certification
- Knowledge of Material Safety Data Sheets and labeling
Job Qualifications
- High school diploma or equivalent
- Minimum 5 years cooking experience in upscale luxury hotel or restaurant
- At least 2 years management experience in similar setting
- Knowledge of saucier prep banquet pantry and hot line operations
- Working knowledge of 5 basic sauce groups soup preparations and cooking temperatures
- Familiarity with banquet production sanitation standards and health department regulations
- Ability to use kitchen equipment and understand safety features
- Strong communication skills in English
- Certified Professional Food Manager certification or ability to obtain
- Ability to train and lead kitchen staff effectively
Job Duties
- Work a flexible schedule including weekends holidays and split shifts
- Arrive to work on time consistently
- Maintain proper uniform cleanliness and grooming standards
- Attend training safety courses and meetings regularly
- Report and follow up on safety hazards to ensure a safe work environment
- Consult with Executive Chef daily on menus specials and cost reduction strategies
- Oversee kitchen staff to maintain production standards
- Maintain high sanitation and safety standards by training and working with staff
- Ensure staff are trained on equipment use and safety features
- Manage food and labor costs with the Executive Chef
- Exercise portion control over food items
- Assist line cooks with food rotation for daily specials and staff meals
- Assist in various kitchen departments as needed
- Direct utility staff in daily and extra cleaning tasks
- Oversee activities of servers in the kitchen ensuring proper procedures
- Inform servers about menu and specials
- Secure kitchen equipment and food storage
- Responsible for kitchen closing procedures ensuring cleanliness and security
- Supervise food-related events in absence of Executive Chef
- Assist Executive Chef in food inventory and maintenance
- Help schedule staff and manage kitchen labor costs
- Order all produce
- Obtain Certified Professional Food Manager certification
- Ensure knowledge and compliance with Material Safety Data Sheets
- Perform additional tasks as assigned by Executive Chef
