Job Requirements

  • High school diploma or equivalent
  • Minimum of 5 years experience in kitchen environments
  • Prior supervisory or management experience
  • Physical ability to perform kitchen tasks
  • Familiarity with food safety and sanitation regulations
  • Strong organizational and communication skills
  • Proficiency with computer systems including inventory and ordering software
  • Ability to manage labor and food costs
  • Willingness to work flexible hours including nights, weekends and holidays
  • Commitment to maintaining a clean and safe work environment

Job Qualifications

  • Minimum of 5 years experience in various kitchen roles including food preparation, line cook, fry cook and expediter
  • At least 6 months experience in a managerial or supervisory capacity
  • Strong communication skills with managers, kitchen staff, dining personnel and guests
  • Ability to perform physical tasks including reaching, bending, stooping and lifting up to 50 pounds
  • Capability to stand for long periods of time up to 9 hours
  • Proficiency with computers and email
  • Knowledge of food safety, sanitation practices and labor cost control
  • Experience in menu planning and inventory management
  • Leadership skills to foster team enthusiasm, respect and integrity

Job Duties

  • Manage all kitchen functions including food purchasing, costing, preparation and quality standards
  • Ensure sanitation and cleanliness throughout the kitchen
  • Train employees in cooking methods, preparation, plate presentation, portion and cost control, and sanitation
  • Collaborate with Executive Chef on menu planning and recipe execution
  • Maintain consistency of recipes and ensure proper use of measurements
  • Oversee ordering according to specifications, receiving protocols, and inventory management
  • Monitor food cost and product usage to meet company targets
  • Control labor cost and staff scheduling to align with business demands
  • Conduct hiring, training, evaluation, and discipline of kitchen personnel
  • Maintain kitchen equipment through inspection and preventative maintenance
  • Enforce safety, security, and cleanliness standards
  • Organize staff training including food safety and first aid
  • Prepare required documentation such as reports and schedules
  • Conduct employee meetings to foster teamwork and communication
