Job Requirements

  • Must be able to work flexible work hours including evenings, weekends, and holidays
  • Shift greater than eight hours in length may be required due to business demands
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills
  • Ability to work in a team environment
  • Ability to stay calm and focused during busy times
  • Ability to read, write, speak, and understand English
  • Additional languages preferred
  • Ability to meet physical demands including working indoors and outdoors in all weather, standing, walking, moving for over eight hours, lifting and carrying items sometimes over fifty pounds

Job Qualifications

  • Culinary degree or pedigree
  • At least five years of culinary experience in large world class resort, hotels and clubs
  • Prior culinary leadership experience in high end restaurant, resort, or private club preferred
  • Complete knowledge and understanding of all cookery techniques and processes
  • Thorough knowledge of all food products, local and imported
  • Experience sourcing local ingredients and creating menu items based on seasonal ingredients
  • Thorough understanding of occupational health and safety issues
  • Knowledge of food and beverage operational requirements

Job Duties

  • Work closely with senior chefs to determine quality and quantity of ingredients used with a view of eliminating waste and spoilage, especially meats, fish, produce
  • Assist culinary leaders with menu creation, development, and implementation
  • Discuss with senior chefs and recommend menu price adjustments when warranted, determine prices of unlisted food items with guidance of senior chefs
  • Schedule working hours of all kitchen employees considering business volume and conserve labor cost
  • Adhere to budgeted headcounts according to budget and business level
  • Assign specific duties to all employees under supervision and instruct them in their work
  • Responsible for quality of all food items prepared, checking food for taste, temperature, and visual appeal
  • Ensure dishes are uniform and portion sizes adhered to as per senior chef specifications
  • Monitor for new products to improve quality or lower food cost and make suggestions
  • Prevent use of contaminated products and restrict ill employees from food preparation
  • Ensure high-level food safety management including HACCP and local regulations
  • Adhere to all safety, health, security, loss control policies and government legislation
  • Collaborate with stewarding to keep kitchen areas clean and orderly
  • Ensure no spoiled or damaged utensils are in use, notify stewarding supervisor of breakage, and maintain equipment par levels
  • Check and maintain equipment in supervised areas to prevent damage or loss
  • Perform any other duties as assigned
