Job Requirements

  • Must be able to stand, walk, and perform physical activities for extended periods
  • Ability to work in varying temperatures and environments with exposure to dust, fumes, or gases
  • Capable of climbing ladders, squatting, kneeling, reaching, grasping, twisting, bending
  • Able to lift, carry, push, and pull up to 100 lbs occasionally
  • Effective communication skills including talking and hearing with sufficient visual acuity

Job Qualifications

  • A high school diploma or equivalent
  • Minimum of 2 years experience as a Sous Chef or similar culinary role
  • Valid Health and Sanitation certification such as ServeSafe
  • Strong communication skills
  • Ability to follow instructions effectively

Job Duties

  • Ensure proper preparation, presentation, and excellence of all food products, adhering to portion sizes and company standards
  • Oversee the preparation and service of a la carte dining, employee meals, and private dining rooms
  • Expedite meal periods ensuring quality, portioning, and presentation of dishes
  • Assist in menu development for a la carte and banquet menus and special requests
  • Hire, train, supervise, and performance-manage kitchen staff to enhance team knowledge and service
  • Prepare work schedules and monitor payroll costs
  • Attend food and beverage meetings and banquet BEO meetings
  • Determine budget requirements and control expenses for food supplies and kitchen materials
  • Analyze food and labor reports including menu engineering to control costs
  • Oversee procurement, receiving, rotation of food supplies, and inventory management
  • Adhere to cleaning schedules and maintain kitchen cleanliness and sanitation
  • Ensure compliance with health, safety, and sanitation regulations
  • Interact professionally with members and guests, accommodating changes and requests
  • Support fellow employees and contribute to positive team environment
  • Address and resolve member and guest complaints professionally
  • Complete additional duties as assigned by management
  • Assist others as needed
  • Follow all company, club, and department policies and procedures
  • Maintain professionalism and commitment to excellence
  • Follow safe working practices and encourage safety
  • Pursue personal and professional growth and maintain certifications
  • Address and resolve challenges with regional and corporate teams
  • Attend daily briefings
  • Wear a clean, neat uniform that meets club standards
