Job Requirements

  • College degree or culinary arts degree preferred
  • 2 years progressively more challenging culinary experience
  • Ability to work in a fast-paced environment with multiple tasks under time constraints
  • Ability to handle heavy business volume and sensitive situations with staff and guests in a timely manner
  • Ability to listen and respond to visual and aural cues
  • Flexibility with schedule including nights, weekends, and holidays as required
  • Physical mobility to work in areas with dust, second hand smoke, varying noise and temperature levels, lighting, vibration, and crowds

Job Qualifications

  • Good oral and written communication skills including tact when dealing with difficult situations, must be fluent and literate in English
  • Excellent interpersonal skills and organizational ability
  • Proficient in Excel, Word, PowerPoint, Access, and Microsoft Outlook
  • Ability to prioritize multiple projects and meet strict deadlines
  • Ability to understand and analyze budget and P&L statements
  • Ability to respond calmly and make rational decisions in stressful situations with co-workers, guests, and vendors
  • Physically able to stand, walk, and move easily around the property for an entire shift
  • Ability to push, pull, carry, and lift up to 50 lbs and perform physical tasks including bending, twisting, stooping, and kneeling
  • Ability to uphold and demonstrate the highest level of integrity and recognize standards required by a regulated business

Job Duties

  • Responsible for culinary operations creating a differentiated service and quality experience and ensuring optimum performance of all
  • Recommends changes on all standard menus and consistently strives through menu planning to improve food costs, volume, quality, attractiveness, and efficient preparation of all food related items
  • Recommends the quality and quantity of items to be purchased to permit rapid turnover with minimum waste and spoilage
  • Evaluates factors such as pricing, quality, marketing, price/value perceptions, guest satisfaction, team member training and development as related to overall food products
  • Maintains kitchen inventory and orders using specified par levels
  • Solicits and responds to guest feedback on food quality professionally and appropriately
  • Ensures compliance with all State of Mississippi and Horseshoe sanitation requirements including ServSafe
  • Supports and ensures consistency with safety and accident prevention programs
  • Creates and supports a family style service culture for guests and team members
  • Supervises all team members for daily operations including hiring, training, coaching, mentoring, and performance management
  • Monitors results through inspection, evaluation, and analysis and makes changes if necessary
  • Evaluates scheduling to meet business demands ensuring optimal operations and customer satisfaction
  • Acts as a role model presenting oneself as a credit to the company and encouraging the same from others
  • Ensures compliance with regulatory, internal controls, policies, and procedures
  • Performs other related duties as assigned
