Job Requirements
- Associates degree in Culinary Arts or related field preferred
- Minimum 1-3 years experience as a Chef or Sous Chef
- Minimum 7 years experience as a cook
- Previous supervisory experience in high-volume food service or production environment preferred
- Ability to work in fast paced, deadline driven environment
- Strong leadership and team management skills required
- Must complete all company required training including ServSafe
- Ability to train others
- Must have strong communication and organizational skills
- Must be able to stand, bend, lift and move intermittently during long shifts
- Ability to lift over 25 pounds
- Willingness to work rotating schedule and over 55 hours per week typical
- Must comply with company policies and safety regulations
Job Qualifications
- Associates degree in Culinary Arts or Culinary Arts certification preferred
- Minimum 1-3 years experience as a Chef or Sous Chef
- Minimum 7 years experience as a cook
- Supervisory experience in high-volume manufacturing, food production, restaurant or catering environment preferred
- In-flight catering or high-volume food service experience preferred
- Ability to cook meals according to detailed specifications
- Strong leadership skills with ability to manage a team of cooks
- Experience with labor relations is a plus
- Ability to train and provide constructive feedback
- Excellent time management and organizational skills
- Strong communication, analytical and leadership skills
- Innovative mindset with ability to implement operational improvements
- Basic computer skills and familiarity with Microsoft Office
- ServSafe certification preferred
- Excellent written and oral communication skills
- Bilingual Spanish is a plus
Job Duties
- Ensure food specifications and labor objectives meet company and customer requirements
- Supervise department for quality and quantity ensuring compliance with FDA, USDA, HACCP and other governmental regulations
- Manage attendance, paperwork, shift setup and assign employees to sections for optimized scheduling
- Order raw materials from storeroom and produce extra meals as needed
- Prepare daily production sheet and assign tasks based on passenger counts
- Train employees on proper food preparation procedures and ensure safety protocols are followed
- Oversee daily production of hot and cold kitchens ensuring quality and consistency
- Monitor compliance with wage and hour policies including rest and meal breaks
- Coach, counsel, and prepare corrective actions for employees in alignment with union agreements
- Review employee cost centers, job titles, and pay rates for accuracy
- Complete all company required training such as ServSafe
- Maintain cleanliness and safety standards throughout shifts
- Drive continuous improvement by making necessary operational changes
- Manage employee retention and reduce turnover
