Job Requirements
- High school diploma or equivalent
- Previous experience in a culinary role, preferably in a supervisory or leadership position
- Knowledge of health and safety regulations
- Ability to work in a fast-paced environment
- Strong communication and leadership skills
- Capability to manage inventory and order supplies
- Flexibility to work various shifts including weekends and holidays
Job Qualifications
- Culinary degree or equivalent professional training preferred
- Experience in menu planning and development
- Proven ability to lead and motivate a culinary team
- Strong organizational and time management skills
- Understanding of food cost controls and budgeting
- Familiarity with health, safety, and sanitation standards
- Ability to handle guest and team member concerns professionally
Job Duties
- Practice and promote Graton Resort and Casino's service standards
- Develop new menu options based on seasons and guest demands
- Follow health, safety and sanitation guidelines
- Assist with meal preparation and support line cooks
- Monitor and record inventory, place orders as needed
- Conduct month-end inventory of food and beverages
- Maintain quality control of products, equipment, supplies, and services
- Ensure kitchens and equipment comply with health and safety regulations
- Handle team member and guest opportunities and issues
- Evaluate and coach team member job performance
- Set schedules and duties for staff
- Conduct daily team member huddles and maintain communication
- Maintain team member records including time and attendance
- Train new team members following department guidelines
- Resolve kitchen problems and take control of kitchen issues
- Participate in budget creation, forecasting, and cost control management
