Job Requirements
- Education or certification from a culinary school
- Three to five years of experience in commercial cooking
- Knowledge of HACCP and food hygiene regulations
- Ability to supervise and lead kitchen staff
- Strong communication skills
- Organizational skills
- Proficient with Microsoft Office
- Familiarity with cost control in food production
Job Qualifications
- Three to five years of experience in commercial cooking or apprenticeship or certification from culinary school
- Knowledge of food and hygiene regulations such as HACCP
- Understanding and demonstration of financial controls such as keeping food cost within budget and minimizing waste
- Good communication and organizational skills
- Service orientation
- Leadership skills
- Proficiency in Microsoft Office and Windows-based computer applications
Job Duties
- Executes and supervises food production activities such as cleaning, cutting, marinating, seasoning, and cooking of food items
- Assumes responsibilities of Executive Chef during their absence including vacation, off-days, and menu presentations
- Supervises, coordinates and controls kitchen helpers in food storage and maintains tidiness following the first in - first out principle
- Conducts, coordinates and supervises inventories
- Monitors material consumption and orders required food and equipment daily to satisfy production plans
- Participates in development of food products and menus
- Ensures awareness and updates of catering manuals
- Executes countermeasures in production in case of customer complaints
- Supports training of kitchen helpers
- Maintains and monitors hygiene, health and safety standards and ensures HACCP regulations are adhered to
- Conducts quality control checks and inspects goods received
- Monitors and ensures compliance with recipe specifications
- Organizes, staffs and directs area of responsibility
- Guides, motivates and develops subordinate employees within HR policy
- Implements and controls cost budgets and initiates corrective actions
- Participates and supports company initiatives such as Global Quality Standard, HACCP, and Lean Manufacturing
