Job Requirements

  • Minimum two years of post-secondary education
  • At least five years of relevant culinary or food service experience
  • Prior hotel or hospitality experience preferred
  • Proven management skills in food production and staff supervision
  • Knowledge of health, safety, and sanitation regulations
  • Strong organizational and communication abilities
  • Ability to manage budgets and control costs
  • Availability to work regular hours and comply with attendance policies

Job Qualifications

  • Two plus years of post-high school education, culinary education preferred
  • Five plus years of related employment experience
  • Hotel experience preferred
  • Advanced knowledge of culinary principles and food service management
  • Knowledge of hotel operations including marketing, security, personnel and labor relations, business planning, maintenance, budgeting, quality assurance, hospitality law, and long-range planning
  • Strong leadership skills to motivate and develop staff
  • Ability to work under time constraints and deadlines
  • Effective verbal and written communication skills adaptable to different audiences

Job Duties

  • Manage the daily production, preparation, and presentation of all food for the hotel restaurant(s) and room service to ensure consistent, quality products that conform to HEI franchise standards
  • Manage human resources in the kitchen production and preparation areas including interviewing, hiring, scheduling, training, developing, coaching, counseling, conducting performance and salary reviews, recommending discipline and termination as appropriate
  • Schedule and manage maintenance and sanitation of the kitchen, equipment, and related areas to meet or exceed federal, state, corporate, and franchise health and safety regulations
  • Monitor, analyze, and control all labor and food costs while preparing reports and schedules to ensure budget compliance and quality improvement
  • Promote the Accident Prevention Program to minimize liabilities and expenses
  • Assist the Executive Chef in creating, costing, and implementing seasonal and special menus
  • Assume responsibilities of the Executive Chef in their absence
  • Comply with attendance rules and be regularly available to work
  • Perform any other job-related duties as assigned
