Job Duties
- Creates preparation and Mise en Place lists for AM and PM stations in conjunction with Sous Chef
- Performs daily inspection of all AM and PM stations ensuring proper preparation
- Expedites lunch service and assists cooks with plating and preparation during peak hours
- Consults with Executive Chef, Banquet Chef and Sous Chef on food production
- Utilizes leftovers and assists in planning daily and weekly specials
- Checks and confirms all specifications, portions, freshness and quality
- Ensures all items are properly labeled and dated
- Assists in the preparation, cooking and plating of A la Carte and Banquet menu items as needed
- Assists on any busy station at any time
- Oversees cooking and presentation of all food to ensure quality and attractive plates
- Instructs cooks on cooking details and proper procedures
- Assists purchasing manager with inventory
- Monitors bulk production items such as demi-glace, stocks and soup
- Prepares demi glace, stocks, soups and sauces as required
- Checks meat cart and portions meats and seafood
- Inspects walk-in cooler with purchasing manager for proper food storage
- Confirms cleaning and deep cleaning lists are satisfactorily completed
- Secures kitchen and coolers at the end of each evening
