Job Requirements

Job Qualifications

  • Culinary degree or pedigree
  • At least five years of culinary experience in large world-class resorts, hotels, or clubs
  • Prior culinary leadership experience preferred
  • Complete knowledge of cookery techniques and processes
  • Thorough understanding of food products, both local and imported
  • Experience sourcing local, seasonal ingredients
  • Knowledge of occupational health and safety
  • Familiarity with food and beverage operational requirements

Job Duties

  • Work closely with senior chefs to determine ingredient quality and quantity while minimizing waste
  • Assist culinary leaders with menu creation, development, and implementation
  • Recommend menu price adjustments and determine prices of unlisted food items
  • Schedule working hours for kitchen staff considering business volume and labor costs
  • Assign specific duties and train kitchen employees
  • Ensure quality control of food taste, temperature, and presentation
  • Adhere to established portion sizes and food specifications
  • Identify new products to improve food quality or reduce costs
  • Enforce food safety and health regulations including HACCP
  • Collaborate with Stewarding to maintain clean and orderly kitchen areas
  • Monitor maintenance of kitchen equipment and report damages
  • Perform any other duties as assigned
