Job Duties

  • Act as intermediary between Executive Chef and line staff
  • Plan and direct food preparation activities
  • Manage kitchen staff and ensure compliance with recipe specifications
  • Supervise food production processes including cleaning, cutting, marinating, seasoning, and cooking
  • Coordinate and control kitchen helpers in food storage and organization
  • Oversee day-to-day meat station production and kitchen operations
  • Monitor material consumption and order food and equipment
  • Organize kitchen stations with proper staffing and direction
  • Enforce sanitation regulations and safety standards
  • Ensure kitchen staff perform at required standards and wear proper uniforms
  • Taste and check station products for quality and consistency
  • Assist in developing and updating standardized recipes
  • Assign tasks efficiently to utilize labor and meet production needs
  • Maintain cleanliness and organization of kitchen areas
  • Act as manager, team leader, and motivator for kitchen staff
  • Document and enforce food safety and workplace safety procedures
  • Follow up on employee conduct issues and document accordingly
  • Assign cleaning schedules to kitchen porters and monitor completion
  • Train new employees and ensure proper station training
  • Collaborate with office manager on training materials and new hire tools
  • Maintain positive, professional approach with coworkers and customers
  • Guide, motivate and develop employees
  • Expedite food from line stations
  • Arrange tickets and order food preparation timely
  • Ensure food quality leaving kitchen meets highest standards
  • Check portion sizes and attractive presentation
  • Conduct quality checks on received goods
  • Organize cooler/freezer and rotate products according to HACCP guidelines
  • Conduct monthly food inventory
  • Monitor product quality and report issues
  • Control and eliminate product waste
  • Perform duties assigned by Executive Chef
  • Schedule and monitor labor costs
  • Submit weekly schedules for approval
  • Monitor and report employee attendance and tardiness
