Job Requirements

  • High school diploma
  • current sanitation certification or ability to obtain within 6 months
  • safe food handling certification
  • minimum three years lead experience as Sous Chef or equivalent
  • five plus years managing high volume kitchens
  • proficiency in multiple cooking stations and methods
  • physical ability to lift up to 50 pounds
  • ability to stand for extended periods
  • ability to work in kitchen environment with varying temperatures
  • attention to detail and manual dexterity
  • ability to work flexible schedule including nights, weekends, holidays
  • strong communication and organizational skills

Job Qualifications

  • High school diploma
  • culinary arts degree preferred
  • current and approved sanitation certification or ability to obtain within 6 months of hire
  • safe food handling certification
  • minimum three years lead experience as a Sous Chef or equivalent role
  • over five years experience managing high volume commercial kitchens
  • three plus years cooking experience in fine dining environment preferred
  • proficiency in multiple kitchen stations and cooking methods
  • advanced knife skills
  • inventory ordering and waste management proficiency
  • strong recipe production skills
  • ability to create and deliver high-quality products quickly
  • knowledge of culinary and market trends
  • excellent organizational and time management skills
  • computer proficiency including online purchasing and inventory management
  • strong kitchen and staff management record
  • mathematical proficiency
  • effective communication skills
  • flexible work schedule availability

Job Duties

  • Oversee daily culinary operations
  • supervise production of daily specials
  • delegate tasks to kitchen staff
  • spot-check product for quality
  • assist on the line during peak service times
  • assist the Executive Chef in planning, ordering, inventory, and food preparation
  • assume full responsibility of culinary operations in absence of Executive Chef
  • assist with menu development and implementation including daily and weekly specials and special event menus
  • ensure high quality food preparation and presentation
  • maintain cost-effective and profitable food production
  • monitor holding and storage operations and food service sanitation
  • support kitchen cost controls and procurement
  • resolve kitchen issues effectively
  • prepare and serve therapeutic diet foods
  • assist in serving meals per dietary preferences
  • participate in planning special occasions and theme meal days
  • assist in food preparation, portioning, garnishing, and safe storage
  • estimate food consumption and manage recipe standards
  • act as liaison between Executive Chef and back of house employees
  • conduct pre and post shift walkthroughs
  • enforce food safety policies
  • ensure compliance with federal, state, and local regulations
  • maintain a safe work environment
  • uphold residents’ rights policies
  • report hazardous conditions promptly
  • follow sanitation and food safety procedures
  • ensure proper storage and cleaning schedules
  • maintain kitchen and storage facility organization
  • attend required in-services
