Job Requirements

  • Minimum five years of experience in food & beverage culinary operations
  • At least two years of managing personnel experience
  • Able to obtain a valid Racing License and applicable health certifications
  • Willingness to assume responsibility for department performance
  • Ability to work flexible hours and handle high pressure deadlines
  • Able to enforce company policies and safety regulations
  • Physical ability to perform duties including lifting up to 50 pounds
  • Must maintain interpersonal working relationships among personnel and other departments

Job Qualifications

  • Minimum five years of experience in Food & Beverage culinary operations
  • At least two years managing personnel
  • Four-year degree in a related field or equivalent experience preferred
  • Ability to obtain a valid Racing License
  • Applicable health certifications
  • Strong management abilities
  • Financial and business acumen including budget preparation and reporting
  • Good interpersonal working relationships
  • Creative problem solving and resolution skills
  • Strong oral and written communication skills

Job Duties

  • Manage all areas within Food & Beverage Back of House
  • Oversee kitchen stewards, cooks, and lead cooks
  • Develop Back of House Team Members including hiring and coaching
  • Review staffing levels and assign duties
  • Enforce company policies, safety, and health regulations
  • Improve service execution, ticket times, and production schedules
  • Control food costs and manage purchasing, storage, portion, and waste control
  • Assist with kitchen equipment maintenance scheduling
  • Contribute to annual budgets and business plans
  • Coordinate menu planning and pricing
  • Work with Marketing on event and promotion planning
  • Maintain relationships with property management and vendors
