Job Requirements
- Minimum five years of experience in food & beverage culinary operations
- At least two years of managing personnel experience
- Able to obtain a valid Racing License and applicable health certifications
- Willingness to assume responsibility for department performance
- Ability to work flexible hours and handle high pressure deadlines
- Able to enforce company policies and safety regulations
- Physical ability to perform duties including lifting up to 50 pounds
- Must maintain interpersonal working relationships among personnel and other departments
Job Qualifications
- Minimum five years of experience in Food & Beverage culinary operations
- At least two years managing personnel
- Four-year degree in a related field or equivalent experience preferred
- Ability to obtain a valid Racing License
- Applicable health certifications
- Strong management abilities
- Financial and business acumen including budget preparation and reporting
- Good interpersonal working relationships
- Creative problem solving and resolution skills
- Strong oral and written communication skills
Job Duties
- Manage all areas within Food & Beverage Back of House
- Oversee kitchen stewards, cooks, and lead cooks
- Develop Back of House Team Members including hiring and coaching
- Review staffing levels and assign duties
- Enforce company policies, safety, and health regulations
- Improve service execution, ticket times, and production schedules
- Control food costs and manage purchasing, storage, portion, and waste control
- Assist with kitchen equipment maintenance scheduling
- Contribute to annual budgets and business plans
- Coordinate menu planning and pricing
- Work with Marketing on event and promotion planning
- Maintain relationships with property management and vendors
