Job Duties

  • Manage kitchen shift operations and ensure compliance with food and beverage policies, standards and procedures
  • Estimate daily production needs weekly and communicate to kitchen personnel daily
  • Assist Executive Chef with all kitchen operations and preparation
  • Prepare and cook foods for regular service and special functions
  • Develop and create new culinary applications, ideas, and artistic contributions
  • Assist in food presentation and create decorative food displays
  • Maintain purchasing, receiving, and food storage standards
  • Ensure compliance with food handling and sanitation standards
  • Perform duties of kitchen managers and employees as needed
  • Recognize superior quality products and flavor
  • Ensure compliance with applicable laws and regulations
  • Follow proper food handling and temperature guidelines
  • Operate and maintain kitchen equipment and report malfunctions
  • Check raw and cooked food quality to meet standards
  • Supervise and coordinate cooks and food preparation staff
  • Lead shifts by personally preparing food and fulfilling specifications
  • Use interpersonal skills to lead, influence, and encourage team
  • Build mutual trust, respect, and cooperation among team members
  • Serve as a role model demonstrating appropriate behavior
