Job Qualifications

  • Culinary arts degree or equivalent experience
  • Previous experience in a supervisory or sous chef role within a busy kitchen
  • Strong knowledge of kitchen operations including inventory and cost control
  • Experience in menu development and recipe creation
  • Excellent communication and leadership skills
  • Ability to train and mentor kitchen staff
  • Familiarity with health and safety regulations
  • Proficiency in managing kitchen logistics such as scheduling and payroll
  • Ability to work efficiently under pressure
  • Commitment to maintaining high standards of food quality and presentation

Job Duties

  • Responsible for kitchen logistics when chef is absent or assisting chef when he is present including scheduling and payroll
  • Assist with staff food training and generate training materials such as recipes and tastings
  • Continually review and manage performance of all culinary staff and provide feedback
  • Understand, follow and direct others in current safety procedures
  • Maintain the quality and presentation of food to achieve favorable guest feedback
  • Prepare dishes while training others to achieve consistency
  • Follow dish presentation as set by chef to achieve 100% consistency during service
  • Assist in creating new menu offerings such as specials and seasonal changes
  • Follow company procedures for accurate food ordering
  • Maintain proper inventory of food items ensuring freshness
  • Assist chef in managing food and labor costs
  • Maintain strong communication with front of house management
  • Assist chef with menu change proposals including costing and ingredient sourcing
  • Follow procedures for menu changes including introductions and tastings
  • Keep all culinary and back of house documentation up to date including job duties and checklists
  • Attend meetings requested by chef or front of house managers
  • Check company Outlook for incoming emails
  • Participate in daily reporting and remain up to date
  • Ensure compliance with health department rules to pass inspections
  • Be present in the kitchen during all scheduled meal periods
  • Prepare and cook dishes according to recipes while managing order pace
  • Communicate last minute menu changes efficiently to front of house team
  • Communicate food-related issues to front of house team
  • Organize tastings of menu changes and specials for service staff
  • Maintain current knowledge of foods and ingredients and trends
  • Engage in self-development and educational opportunities
