Job Requirements

  • high school diploma or equivalent
  • culinary arts degree required
  • 3-5 years experience preparing meals as a sous chef or in a supervisory role
  • must be able to cook a variety of foods in large quantities ensuring optimal quality at point of service
  • must be able to follow recipes
  • follows all industry and regulatory agency procedures and requirements

Job Duties

  • provides training and development of other production personnel
  • cooks a variety of foods following standardized recipes and methods of preparation
  • follows menus provided making changes with the consent of the executive chef
  • prepares the breakfast and noon meal
  • schedules food preparation so that all items are prepared in small batches continuously throughout the serving period
  • requisitions food and supplies for daily needs
  • estimates food requirements and controls serving portions eliminating waste and leftovers
  • supervises hot/cold production personnel
  • ensures sanitation of all food service equipment related to food temperatures, proper cooking and cooling techniques, cutting board usage, cleanliness of cooking conditions
  • assumes executive chef's supervisory responsibility on his/her scheduled days off and in his/her absence
  • functions as food service supervisor assuming full responsibility of this position as needed
  • assists with catering for VIP functions and employee dining as necessary
