Job Requirements

  • Minimum of 10 years professional cooking experience
  • Minimum of 3 years supervisory experience
  • Knowledge of upscale Mexican cuisine preferred
  • Menu development experience preferred
  • Ability to communicate fluently in English and Spanish
  • Familiarity with California employment laws
  • Proficient in basic Microsoft Word and Excel
  • Capacity to work in a fast-paced environment
  • Physical ability to stand for extended periods
  • Able to lift, pull or push up to 50 lbs
  • Strong leadership and communication skills

Job Duties

  • Work with the Executive Chef to understand, teach and enforce all food and beverage standards
  • Responsible for menu development with the Executive Chef and Director of Food and Beverage for PM restaurant, In-Room Dining and other PM menu services
  • Ensure the kitchen is clean, organized and safe at all times
  • Order, receive and inspect foodstuffs for quality, quantity and price
  • Create and display weekly schedules supporting labor costing goals
  • Ensure menu additions and daily specials meet stylistic, costing and quality standards
  • Oversee orderly running of the kitchen during all meal periods to assure excellent, prompt food service
  • Maintain standards established by the Executive Chef and Director of Food and Beverage
