Job Requirements

  • Three to five years of experience in commercial cooking or apprenticeship or certification from culinary school
  • Knowledge of food and hygiene regulations (HACCP)
  • Good communication and organizational skills
  • Service orientation
  • Leadership skills
  • Good knowledge of Microsoft Office and Windows-based computer applications
  • Ability to understand and demonstrate concepts of financial controls such as maintaining food cost within budget, controlling stock levels, and minimizing waste

Job Duties

  • Execute and supervise food production activities such as cleaning, cutting, marinating, seasoning, and cooking food items
  • Assume responsibilities of Executive Chef during absences including vacation and off-days and handling menu presentations
  • Supervise, coordinate, and control kitchen helpers in food storage practices such as maintaining tidiness and following the first in-first out principle
  • Conduct, coordinate, and supervise inventories
  • Monitor material consumption and order required food and equipment daily to satisfy production plans
  • Participate in development of food products and menus for presentations
  • Maintain and monitor hygiene, health and safety standards while adhering to HACCP regulations
  • Conduct quality control checks and ensure compliance with recipe specifications
  • Execute countermeasures in production in case of customer complaints
  • Support training and development of kitchen helpers
  • Ensure the area of responsibility is organized, staffed, and directed efficiently
  • Guide, motivate, and develop subordinate employees within Human Resources policies
  • Implement and control cost budgets and initiate corrective actions if required
  • Participate and support company-wide initiatives such as Global Quality Standard, HACCP, and Lean Manufacturing
