Job Requirements

  • Post-high school education preferred
  • Five or more years of related work experience
  • Experience in a hotel kitchen environment preferred
  • Knowledge of food safety and sanitation standards
  • Strong leadership and people management skills
  • Ability to manage budgets and control costs
  • Excellent communication and organizational skills
  • Ability to work under pressure and meet deadlines
  • Must be available to work regularly as scheduled

Job Qualifications

  • Two-plus years of post-high school education, culinary education is desirable
  • Five-plus years of employment in a related position
  • Experience in hotel environment preferred
  • Advanced knowledge of principles and practices within the food profession including management of associates, complex problems, and food and beverage management
  • Knowledge of hotel operations including marketing plans, security and safety programs, personnel and labor relations, business plan preparation, repairs, maintenance, budget forecasting, quality assurance, hospitality law, and long-range planning
  • Leadership skills to motivate and develop staff and ensure goal accomplishment
  • Ability to work under time constraints and deadlines
  • Effective verbal and written communication skills, adaptable communication style for different audiences

Job Duties

  • Manage the daily production, preparation, and presentation of all food for the hotel restaurant(s) and room service to ensure quality, consistency, and compliance with HEI franchise standards
  • Manage human resources in the production and preparation areas of the kitchen including interviewing, hiring, scheduling, training, developing, empowering, coaching, counseling, conducting performance and salary reviews, recommending discipline and termination, and ensuring a safe work environment
  • Schedule and oversee the maintenance and sanitation of the kitchen, equipment, and related areas adhering to federal, state, corporate, and franchise health and safety standards and regulations
  • Monitor, analyze, and control all labor and food costs, prepare reports, charts, and schedules to ensure budgets are met or exceeded while maintaining or improving quality
  • Promote the Accident Prevention Program to minimize liabilities and expense
  • Assist the Executive Chef in creating, costing, and implementing seasonal and special menus
  • Assume responsibilities of the Executive Chef in their absence
  • Comply with attendance rules and maintain regular availability for work
  • Perform other job-related duties as assigned
