Job Requirements

  • Minimum five years of high-volume professional cooking experience
  • demonstrated knife handling and meat trimming skills
  • ability to manage and direct kitchen staff
  • familiarity with following and extending standardized recipes
  • experience in kitchen organization and record keeping
  • knowledge of food safety and sanitation protocols
  • ability to work independently and in a team
  • excellent customer service
  • English language proficiency
  • reliable transportation and attendance
  • pass Cook 1 screening test

Job Qualifications

  • Minimum five years of high-volume professional cooking experience
  • proficiency in thickening techniques, soups, sauces, saute, stir fry, pan frying, deep frying, grilling, broiling, roasting, steaming, braising, stewing, cold food production, and food presentation
  • knowledge of kitchen equipment such as grills and deep fat fryers
  • excellent knife handling skills
  • ability to lead support staff
  • experience following standardized recipes
  • experience maintaining kitchen workstations and records
  • thorough understanding of safe food handling and sanitation
  • strong customer service skills
  • able to prioritize and work efficiently
  • effective communication abilities
  • able to read, write and speak English
  • basic math skills

Job Duties

  • Prepare high-volume specialty foods following established recipes and production systems
  • butcher, trim, season, and grill meats
  • communicate kitchen progress and inventory needs with production manager
  • maintain production and usage records
  • uphold high sanitary, hygienic and safety standards as per HACCP and health guidelines
  • direct and train support staff and student workers in the kitchen
  • perform general cleaning and other food service tasks as assigned
