Job Requirements

  • High school diploma or equivalent
  • Proven experience as a sous chef or in a similar culinary leadership role
  • Knowledge of food safety and sanitation standards
  • Ability to work a 45-hour workweek including evenings and weekends
  • Strong leadership and team management skills
  • Good organizational and communication abilities
  • Ability to maintain food quality and presentation standards
  • Capable of managing inventory and controlling food costs
  • Willingness to follow company policies and procedures
  • Commitment to delivering excellent guest service
  • Ability to handle physical demands of the kitchen environment

Job Qualifications

  • Proven experience as a sous chef or similar role in a banquet or catering environment
  • Strong knowledge of food preparation and presentation
  • Experience managing kitchen staff and operations
  • Familiarity with food safety and sanitation regulations
  • Ability to train and lead culinary team
  • Excellent organizational and communication skills
  • Ability to maintain high standards of quality and consistency
  • Understanding of portion control and recipe adherence
  • Capable of inventory management and food cost control
  • Strong problem-solving skills in a fast-paced environment
  • Ability to work flexible hours including evenings and weekends
  • High school diploma or equivalent
  • Culinary degree or certification preferred

Job Duties

  • Order and requisition banquet products in a timely manner and appropriate quantities
  • Coordinate, plan, and supervise production and presentation of food for banquet events
  • Manage daily banquet culinary operations including meal preparation, food quality supervision, sanitation compliance, team productivity, policy implementation, cost controls, and profitability
  • Analyze banquet event orders to plan and coordinate food and beverage functions
  • Perform daily inventory walk-throughs to determine production priorities
  • Assign production duties to kitchen staff
  • Conduct line checks for dinner service to ensure food quality
  • Meet daily with line cooks to coordinate production standards
  • Properly use, handle, clean, breakdown, and maintain kitchen equipment
  • Maintain food quality standards including consistency and presentation
  • Coordinate proper food storage according to standard procedures
  • Direct employees in proper service techniques
  • Assist with expediting dinner service
  • Perform end-of-night walk-throughs
  • Document and review kitchen management log books daily
  • Control cleanliness and sanitation of entire kitchen staff
  • Manage and oversee all kitchen stations and walk-ins
  • Practice, train, monitor, and maintain sanitation standards including state and local health guidelines
  • Deliver passionate and engaging service to guests according to the GUEST model
  • Build solid relationships with colleagues
  • Treat colleagues with respect and dignity
  • Perform other duties and responsibilities as assigned
  • Work approximately 45 hours per week as an Overtime Eligible Manager
